4 chiles serranos
3 garlic cloves
1/2 bunch of cilantro
1/4 white onion
Crush garlic and onion in a mortar and pestle. or in a food processor on a light dice with no water. Fill a saucepan with enough water to cover tomatillos and chiles. Boil the chiles for one minute on a rolling boil. Then add the tomatillos to the boiling water with the chiles until the tomatillos change to a lighter color. Pull them out of the boiling water. Crush the chiles in the mortar and pestle or in the food processor that already contains the garlic and onion. Add the tomatillos to the mixture and crush to a salsa consistency.
When you have all of it ready add cut cilantro and some chopped onion to give it flavor and consistency.
Salsa verde goes well with tortilla chips, tacos, or other Mexican dishes.
